Lemon Meringue
Well, after hearing yesterday about how this was her mother’s recipe…
Everyone (and I mean everyone) thought it looked, smelled, and tasted good. The only problem?
I remembered why I don’t make Lemon Meringue pie very often. So many steps, and so very many dishes, bowls, pots, spoons, and measuring cups to clean! (And that’s including having started with a frozen pie crust–because you KNOW I don’t do pie crust well. Can you imagine how big this pile of cleaned dishes would be if I’d had to make the pie crust, too?)

LOL…I don’t do pie crusts, either!
Maybe it is messy, but enquiring minds want to know how it turned out? Because sometimes food is worth the extra cleanup?

And that’s why I make my pie crust in advance!

It looked good! And I just had a lovely mental image of a pie colorwheel – lemon meringue, strawberry, and blueberry. Lovely.

Oh yum! I can’t remember the last time I had lemon meringue pie. Every Thanksgiving and Christmas growing up my mother would make one specially for me since I didn’t like any other pie at the time. My fav was with the graham cracker crust.
