Okay, here’s the recipe:

GINGERSNAPS

120708_0020Makes 10-12 dozen cookies, and is best if you have the time to let the dough chill in the refrigerator for at least several hours or overnight.

1 1/2 cup butter (3 sticks)
2 cup sugar
2 eggs
1/2 cup dark unsulphered molasses
4 cup flour
1 tsp baking soda
2 tsp salt
4-6 tsp ginger (depending on how gingery you want them)
1 tsp cinnamon

Cream butter and sugar together, then add eggs one at a time, then the molasses. Sift together dry ingredients and then add one cup at a time, mixing well after each addition.

If at all possible, chill the dough for several hours or overnight. You can go right ahead to the baking part, but the dough will be sticky and harder to handle.

Preheat the oven to 350F.

Roll nickel-sized pieces of dough (about 1 inch/2.5 cm) between the palms of your hands. Then roll them in granulated sugar and place them on a lightly greased cookie sheet. (A non-stick coating is helpful.)

Bake for 10-12 minutes.
